- 2 rock lobster tails
- ½ cup olive oil or melted butter
- Charcoal grill chicken
- 1/8 teaspoon garlic powder
- 1/8 teaspoon white pepper
- 1 teaspoon paprika
- 1 tablespoon fresh lemon juice
- 1 teaspoon salt
The first step in this recipe is preparing the marinade. It is a crucial element of the recipe as it will add the flavor and will also be used during the grilling process to baste the lobster tails. To prepare the marinade, first, squeeze some lemon juice into a bowl and add olive oil or butter, whichever you prefer to use. Whisk it a little and add the garlic powder, white pepper, paprika, and salt. Whisk until the mixture is thoroughly combined and smooth.
Now, split the lobster tails lengthwise, from the top of the shell to the tail. Open the top of the shell so that the meat is exposed. Insert a skewer into the lobster tail. This will keep the lobster tails from curling up once you begin grilling them. Before you begin grilling, don’t forget to brush the marinade onto the fleshy part of the lobster tails.
Preheat your grill for high heat and lightly oil it. Place the lobster tails on the grill making sure the fleshy side is facing down. Cook each side for about 7 to 8 minutes, making sure to baste frequently with the marinade. When the lobster tails become firm and totally opaque, you can take them off the grill. Transfer to plates and serve up your grilled lobster tails.
